BEETROOT CHOCOLATE CAKE 

We eat beetroots regularly. They are lovely in a salad, roasted with some greens and feta cheese or blended into smoothies. It was an easy leap, then, to imagine the goodness of a beetroot chocolate cake once I came across the idea by the inspirational people from The Green Kitchen.

My love of all things wheat probably vouches for my sensitivity to gluten. Thus, one of the main challenges in eating well for me lies in cutting out processed flour products. DARK CHOCOLATE BARK WITH FRESH MINT AND PISTACHIOS

A few weeks ago, I wrote that my good intention for this year is to make more of my food and snacks at home rather than buying premade. And I have been sticking to this. Obviously I love chocolate just as much as the next girl, so I decided to make my own bark for after dinner treats.
