This is another sister inspired cake. My sister is a really good baker and cook. She mostly makes scrumptious dishes, preferably Italian ones served with plenty of wine but she lately has been on a discovery of healthier alternatives too. So, when she told me about a cheesecake that can be served as a nutritious breakfast, there was no doubt that I had to have a stab at it too.
Granola is a great staple to have in the kitchen. It can be made in advance and makes for a very nutritious breakfast with some natural yogurt or almond/rice milk. Or, for a quick snack, it is perfect to serve with a couple of slices of apple.
Oatmeal raisin cookies are incredible. They are sweet, chewy and crunchy all at the same time and last forever on the kitchen counter.
Scrolling along my Instagram feed, I stumbled across one of my healthy and fit friends having a lemon cheesecake for breakfast, which looked absolutely divine. I wanted me some of that too! It is so good to be inspired in these ways as preparing food can easily become a routine with several go to dishes prepared over and over again (hey, we are all busy enough as it is). So she inspired me to try and make this raw, vegan version of a cheesecake.
